Warmer weather is on its way! Cool down with these Tart Cherry Coconut Yogurt Popsicles made with Montmorency tart cherries. We mixed frozen tart cherries with creamy coconut yogurt for these yummy popsicles, then topped them off with a dried tart cherry pistachio granola for the perfect treat. These are an easy breakfast or snack option to keep you going throughout the day!

For the Granola:

ingredients

  • 1 cup rolled oats
  • 1/4 cup pistachios
  • 2 tablespoons sunflower seeds
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 1/2 cup dried Montmorency tart cherries
  • 1/4 cup shredded coconut

For the Coconut Yogurt Pops:

ingredients

  • 1 cup coconut yogurt
  • 1 (14.5 ounce) can full fat coconut milk
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup frozen Montmorency tart cherries, halved

Method

  • Step 1

    Preheat oven to 400℉. Line a baking sheet with parchment paper.

  • Step 2

    In a large mixing bowl, combine rolled oats, pistachios, sunflower seeds, maple syrup, coconut oil, vanilla extract and salt. Mix well, taking care to coat each ingredient.

  • Step 3

    Pour mixture onto a parchment lined baking sheet and spread into an even layer. Bake until golden brown, 12-15 minutes. Remove from the oven, add the cherries and coconut to the sheet pan and combine with a heat proof spatula. Bake until the coconut is a light golden brown, 3-5 minutes.

  • Step 4

    Allow granola to cool on baking sheet for 10 minutes, then remove and reserve in a small bowl.

  • Step 5

    In a medium mixing bowl whisk together yogurt, coconut milk, maple syrup, vanilla and salt together.

  • Step 6

    Using a small spoon, add in 2-3 halved cherries to the bottom of each mold. Pour ¼ cup of yogurt mixture into popsicle molds, coming up the side 2/3rds of the way. Add 1 tablespoon of granola mixture to the top of the popsicles, filling up the rest of the mold. Gently add in popsicle sticks and freeze for at least 6 hours, or overnight.

  • Step 7

    To remove, run warm water over popsicle molds for 10-20 seconds. Remove from mold and enjoy immediately!
