A lot of things have changed in the past few months in the face of COVID-19, but one thing that remains constant is the need to cook and nourish yourself, or your family. In this weekly guide, we provide recipes that you can easily pull off based on pantry staples and what you might have on hand. We provide tweaks and substitutions you might need, keeping in mind that access to fresh ingredients may be hard to come by. We hope you use it as inspiration to turn out healthy and hearty meals while riding out this storm at home. Stay safe, be well and take some comfort in the kitchen.

Things to Prep Ahead This Week: We realize some of the items we rely on from the store each week may be difficult to come by. Here are a few basics you might want to consider making yourself to be as resourceful as possible and to add lots of flavor to your pantry meals! 
Vinaigrette
Homemade Granola 
Homemade Nut Butter
 
Homemade Bread
Pesto (add extra flavor to sandwiches, pastas & more!)

THE RECIPES
Use these as a guide for inspiration. Just because you don't have every single ingredient doesn't mean you can't replicate the main flavor of the dish! 
 
Sweet, Sweet Potatoes 
These sweet spuds keep for a long time in your pantry and the options for using them are endless. We love pairing sweet potatoes with something spicy to balance out the flavors.
These patties can be served on their own or on top of a bed of greens for a complete meal.  Feel free to mix up the spices used here, any combination of your savory favorites would work well.

Who doesn’t love a quick and easy skillet hash?! Plus, we love the idea of taking oatmeal savory. Such a great way to get creative with pantry ingredients!

Crack open a can of sweet, juicy tomatoes and pull together dinner in record time.
Moroccan Chickpea and Tomato Stew by @Sophiesutton

This Moroccan style chickpea soup is full of warming spices like cinnamon and red pepper flakes and rounded out with chickpeas and lentils. The recipe also calls for harissa paste, if you do not have any you can totally substitute with your hot sauce of choice. It won’t be as traditional, but it will still be delicious!

These lemon bars are bringing us some much needed sunshine!  This simple almond flour crust comes together in minutes and the curd filling is super easy to make! Don’t have lemons? Use whatever citrus you happen to have on hand! P.S. Sumac is totally optional, but if you have some in your pantry it brings a really lovely tartness to this easy dessert.
