For the Cranberry Sauce

ingredients

  • 1 (12-ounce) bag fresh cranberries
  • 1 apple, chopped
  • 3/4 cup red wine
  • 1/2 cup sugar
  • 1/4 cup Simple Truth Maple Syrup
  • 1/2 tablespoon freshly grated ginger
  • 1/2 teaspoon kosher salt
  • 1 lemon, zested and juiced
  • 1 orange, zested and juiced
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch of cardamom
  • pinch of cloves
  • pinch of allspice
  • pinch of black pepper

For the Brie and Maple Pecans

Method

  • Step 1

    First, make the cranberry sauce. Combine all ingredients in a medium sauce pot and bring to a boil. Reduce heat to a simmer and cook for about 15 minutes, mashing the cranberries with the back of a fork as they cook. Remove from the heat.

  • Step 2

    Let cool for about 15 minutes, then check for seasoning, adding more salt, pepper or maple syrup as needed. Transfer into a heat proof dish and set aside.

  • Step 3

    Preheat the oven to 350°F. Line a small baking sheet with parchment paper and set aside.

  • Step 4

    In a small skillet on low heat, add the pecans. Toast the nuts, stirring often, until fragrant, 6-7 minutes. Remove from the heat and transfer to a medium heat proof bowl.

  • Step 5

    To the bowl of pecans, add the maple syrup, brown sugar, cinnamon, nutmeg and black pepper. Toss to combine.

  • Step 6

    Add the brie wheel to the pre-lined baking sheet and top with 1/2 cup of the cranberry sauce and the pecan mixture. Place in the oven and cook until the maple syrup is bubbling and the cheese is soft, 10-15 minutes.

  • Step 7

    Remove from the oven and serve with baguette.
